Agalita Mugaritz, used to be called Kaolin, is the purest, select white china clay, of such high quality as to be edible. Agalita is used at Andoni Luis Aduriz’s restaurant Mugaritz as an edible covering for dishes or, combined with oils, to encapsulate aromas in aromatic pearls. Agalita is used at Mugaritz restaurant, #4 in the world, to make the famous starter of edible ‘stones’, which are in fact potatoes styled cleverly to look like river stones. Agalita Mugaritz is also used to make Fragant Fruit by covering fruits such as apple with a mixture of Agalita and cardamom.

I have produced Chef Andoni Luis Adruiz's pumpkin cubes and served them on a sauce consisting of molasses, lemon juice, citric acid which I thickened with a dab of Xanthan.
I have also prepared Sweet Potato (Yam) in the same way. The sweet potato is a little firmer to the bite and equally delicious.
