Spherification caviar is done using the basic spherification process which consists of submerging a liquid with sodium alginate in a bath of calcium chloride. If the main ingredient is acidic, sodium citrate is used to reduce the acidity of the main ingredient. You can buy all three ingredients in our store in small pouches or 1lb cans.
